Potato or Squash Croutons

  • Use less starchy potatoes (Peruvian, new, Russet) or squash cubes in a 1/3 inch dice.
  • Scant tbsp oil.
  • 1 garlic
  • pinch salt

Heat oil, add potatoes/squash, coat, add salt, cover and let cook through (about 3 mins.) When cooked through turn heat to med. and cook until crispy. Add garlic. Add salt. Makes 1 1/2 c. croutons.

Use this up in Hazelnut and Chard Pasta.
