Soda Bread

  • 2 cups all-purpose white flour
  • 2 cups whole wheat flour
  • 1 tsp salt
  • 1 tbl baking powder
  • 1 tsp soda
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1 egg
  • 1 cup raisins or currents
  • 1 3/4 cup buttermilk OR use sour milk, milk mixed with yogurt or milk with a couple of tablespoons of lemon juice added. (You need some sourness to make this bread rise.)

I usually make two loaves, one plain and one with currents.

Combine flour, salt, baking powder, soda, sugar and add butter. Cut mixture with knives or roll butter between your fingers until crumbly. Divide in half. Add raisins to one half. Beat egg and milk. Divide in half. Add each half of the liquid to each half of the dry ingredients. Stir each half until blended. Knead until smooth. Form two loaves.

With a sharp knife, cut crosses on tops of the loaves.

Bake at 375 for 35 to 40 minutes.
