Borscht

  • 5 beets not peeled
  • 2 pounds stewing beef
  • 2 onions, chopped
  • 1 tin of tomatoes, drained (save liquid)
  • 3 large carrots sliced
  • 2 celery stalks sliced
  • 1 potato per person, cut in chunks
  • 2 cloves garlic
  • Put liquid from tomatoes in measuring jug, add water to make 2 quarts of liquid
  • Flavourings: salt, pepper, lemon juice, sugar

Let all this cook about 2 hours. Take out the beets, peel, slice and return to pot. Add flavourings to taste at the end.
