- 5 beets not peeled - 2 pounds stewing beef - 2 onions, chopped - 1 tin of tomatoes, drained (save liquid) - 3 large carrots sliced - 2 celery stalks sliced - 1 potato per person, cut in chunks - 2 cloves garlic - Put liquid from tomatoes in measuring jug, add water to make 2 quarts of liquid - Flavourings: salt, pepper, lemon juice, sugar Let all this cook about 2 hours. Take out the beets, peel, slice and return to pot. Add flavourings to taste at the end.
