Mrs. Wallace's Dark Christmas cake

  • 1/2 lb. butter
  • 1 1/2 cup sugar
  • 5 eggs
  • 3 cups flour (after sifting)
  • 1/2 cup strawberry jam (may substitute part brandy)
  • 1 tsp almond extract
  • 1 tsp cinnamon
  • 1 tsp each allspice, salt, soda
  • 1/2 tsp clove powder
  • 1 cup dried fruit ( pears, figs, apricots…)
  • 1/2 cup chopped dates
  • 1/2 cup seedless raisins
  • 1 lb. currants
  • 3/4 lb. seeded raisins
  • 1 cup chopped dried black cherries
  • 1 cup chopped nuts

For 1 large cake (7 1/2" square). Line baking pan with parchment paper. Prepare fruit and dredge with some of the flour. Cream butter and sugar well, add eggs one at a time beating well at each addition. Add extract and preserves then dry ingredients and fruit. (Reserve a little batter before adding the fruit to put on top of the cake to prevent the fruit drying out or burning.) bake in a 350 deg. oven for 20 min. then reduce to 275 deg. to finish baking 2 1/2 - 3 hrs.

I like this but I think there could be more walnuts, maybe 1 1/2 cups or 2 cups.
