Super Easy Squash Soup for One
This is an extremely easy lunch for one straight from the freezer.
- 6 oz (1/2 package) frozen cooked squash or squash puree
- 3/4 cups chicken broth
- 1/4 teaspoon ground cumin (I also added some cardamom and coriander)
- salt and pepper to taste
- 2 tablespoons fat free plain Greek yogurt (I had no yogurt and used butter and lemon juice instead)
- 2 tablespoons chopped parsley to garnish (I used arugula instead)
Combine squash, chicken broth, spices, salt and pepper and in a medium saucepan and heat over medium heat until squash is thawed and almost blended and all ingredients are hot, about 15 minutes.
Remove from burner, whisk in Greek yogurt. Check seasonings and add salt and pepper as needed. Blend if desired, or just mash it up.
Serve garnished with chopped parsley.
