Lemon Snapper

- ½ c. flour - - 1 tsp. grated lemon rind - - Salt & freshly ground pepper - - 4 red snapper fillets - - ¼ c. vegetable oil - - Sauce - - - ¼ c. butter - - 4 thin lemon slices, cut in quarters - - ½ tsp. sugar - - ½ c. chopped chives (optional) ) Season flour with lemon rind, salt & pepper. Cover fish with flour mixture on both sides. Heat enough oil in skillet on medium heat to film the skillet. Fry fish 2 to 3 min. per side or until golden. Keep warm. . Add butter to skillet and fry lemon pieces for 2 min. Sprinkle with sugar and cook until lemon pieces are golden, about 2-3 min. longer. Scatter with chives and pour over fish. Serves 4.
