Easy Microwave Macaroni and Cheese

  • 8 oz. (250 g) macaroni, cooked and drained
  • ¼ c. butter
  • 2 tbsp. onion, minced
  • 1 clove garlic, minced
  • ¼ c. flour
  • 1 tsp. dry mustard
  • 1 tsp salt
  • ¼ tsp pepper
  • 2 c. milk
  • 2 c. grated Cheddar cheese
  • 1/3 c. bread crumbs
  • 1 tsp paprika

In a 4-cup measure, melt butter at high for 40 sec. Add onion and garlic and cook at high 1 min. Stir in flour, mustard, salt, pepper; then gradually add milk. Microwave on high 3 min, stirring once while cooking. Continue cooking on med 3-4 min or until sauce thickens. Stir in Cheddar cheese. Stir sauce into macaroni, in a casserole dish. Top with bread crumbs and paprika. Cook at med-high for 7-9 min.

I added some lemon zest and about 1 tbsp of tomato paste to the sauce. I also pretoasted the bread crumbs and topped it with some cilantro. It was extra delicious!
