Salmon Loaf

  • 2 tins canned salmon
  • 2 eggs
  • 2 c. soft breadcrumbs
  • ¼ c. grated onions
  • ½ c. celery
  • ¼ c. parsley
  • ¼ c. cream
  • 1 c. olives

Empty salmon in bowl. Add eggs, crumbs, onion, celery, parsley, and cream. Add dill and olives. Spread into baking pan evenly. Bake at 350° for 45 min.

I revamped the recipe in the following fashion. I used 1 celery stalk and a small onion. I chopped and fried them until soft in a little butter. You could use oil. I left out the olives. I increased the whipping cream to 1/2 c. and reduced the breadcrumbs to 1/2 c. I combined all the ingredients. I also added 1 Tlb. of dill. I baked at 350 for 30 min. Much better!
