Mushroom Sauce

  • 3 green onions, chopped
  • ~4 c. mix of mushrooms (shitake, brown, white etc, not oyster mushrooms)
  • 1 heaping tbsp flour
  • ~1 c. milk
  • couple tbsp oil
  • 1/4 c. - 1/3 c. spices if fresh or 1/2 tsp. if dried

Fry up mushrooms in oil with onions. When soft, add flour. Mix. Add milk and mix. Cook until thick, about 3 mins.

If not thick enough, mix flour with milk or sauce and add. Put in thyme, parsley, basil, whatever.

Serve with rotini or shells or butterfly pasta.
