Carrot Cake

St. Patrick's Day version
  • 1/2 c. oil
  • 1 c. brown sugar
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • optional extra spicing: 1/2 tsp. nutmeg, 1/2 tsp. cloves, 1/2 tsp. allspice, 1/2 tsp. vanilla
  • 1/2 c. milk
  • 1 c. grated carrots (you could also just roughly chop them up in a blender)
  • optional: 3/4 c. roughly chopped walnuts, or raisins, say 1/2 c?

Combine oil, sugar, eggs, and optional vanilla in a bowl.

In another bowl, whisk together flour, soda, baking powder, and all spices.

Add dry ingredients, alternatively with the milk, to the egg mixture, mixing vigorously. Stir in grated carrots and optional walnuts/raisins.

Pour batter into greased 9” square pan. Bake at 350 for 30 minutes.

Ice with Cream Cheese Frosting.

Suggested alteration: double the carrots, raisins, nuts, half the sugar use brown flour.

The raisins totally make up for having less sugar.

Oh and add a couple tbsp of milk to make it less thick.
