Tom's Meatatarian Chilli


  • 2 lbs? dried red kidney beans
  • 1 lb onions
  • 1/2 lb carrots
  • 1/2 lb red bell peppers
  • 1 1/4 lb grass fed chuck roast
  • 4 cloves garlic
  • 1 1/2 cup beef demiglace
  • 3 small cans diced tomatoes
  • zest and juice of half a lime
  • salt
  • pepper
  • bay leaves
  • cumin
  • coriander seed
  • chilli pepper
  • dark chocolate
  • 2 chiles serrano


Soak beans overnight. Add to your biggest pot with enough water to almost cover, and simmer. Julienne onions, and bell peppers, dice carrots, brunoise garlic, brunoise or smaller the chiles serrano. Saute vegetables until caramelization develops, and add to beans, Chop beef into 1/4 inch cubes, pat dry, salt, pepper, and brown, and add to beans. Add tomatoes, beef demiglace, lime juice, dark chocolate, bay leaves, coriander seed, chile powder. Simmer for two hours, and add salt to taste.

Serve with:

Garnish with cilantro and serve with cornbread.
