Avacado Dressing Pasta Salad

Ingredients

  • 12 ounces penne pasta
  • 16 ounce can pinto beans, drained and rinsed
  • 1 cup small tomatoes, halved
  • 1 small jicama, shredded or chopped
  • 1 serrano chile, seeded
  • 2 ripe avocados
  • 1 large clove garlic
  • 3 tbsp lime juice
  • 1/2 tsp chili powder
  • 1/4 cup olive oil
  • salt
  • salad greens for serving
  • one small red onion, chopped
  • 1/4 cup fresh parsley or cilantro

Directions

Cook the pasta. Mince the chile and garlic in a food processor. Halve and pit one of the avocados and add it to the food processor. Add lime juice and chili powder, process. Add the olive oil and salt to taste; process until smooth.

Rinse pasta under cold water, and place in bowl along with beans, jicama, onion, tomatoes and parsley. Dice the remaining avocado and add it to the pasta salad. Pour on the dressing and toss gently to combine. Serve on salad greens.

I use only 1/4 red onion, sometimes leave out the jicama, add corn and extra tomatoes.
