Brine fish.
Stella culinary says to brine in 5% solution for 2-3 hrs or for 20 - -60 mins. 1 hr @ 5% seemed too salty to me.
Rinse w cold water.
Sear in a slightly less than 5% brine solution (stella culinary says 5% but too salty.
Rinse w cold water.
Sear in combination of clarified butter and canola oil and finish in 500 degree oven.
