Gluten Free Pancakes

Gluten Free (GF) Pancakes

This recipe was adapted from Bob’s Pancakes and Regan’s Gluten Free Bread.

Create GF (Gluten Free) Mix:

  • 1 1/2c potato starch
  • 1c brown rice flour
  • 1c chickpea flour
  • 1/2c tapioca starch (Arrowroot)

Mix dry ingredients:

  • 1c GF mix
  • 1tbsp (heaping) baking powder
  • 1/2tsp salt
  • 1tbsp sugar
  • 1/4tsp (heaping) baking soda

Heat griddle to 425F.

Mix wet ingredients, then add to dry and gently mix:

  • 1 egg
  • 1c milk (almond, rice, etc)
  • 1/2tbsp cider vinegar

Makes four pancakes (one big person or two smaller ones). Use 1/2c batter per pancake. Flip pancake when top side has formed bubbles all over.
