Mom's Potato Salad

Mom’s potato salad recipe is taken from Julia Child (I think French rather than American style)

Boil until cooked through, but overly mushy:

  • 1 lb new potatoes

Slice, and add:

  • 1/2 c. bouillon or water
  • 2 Tbsp. olive oil
  • 2 Tbsp. white vinegar or apple cider
  • 1/2 tsp. Dijon mustard
  • 1 tsp salt
