We used 1 and1/2 medium sized Yukon Gold potatoes per person. Slice into chip like strips,
Heat the oven to 450 F.
Put about 1/2 Tbl. oil or fat per potato in the pan. We used a combination of duck fat and olive oil. When the oil is hot, add potatoes. After about 10 minutes, stir up the potatoes. Use a knife or spatula to loosen them from the pan if they are sticking. After another 10 minute sprinkle with salt and pepper. You can also use nutmeg or garlic and rosemary, or paprika as seasoning.
The potatoes will be done in about 30 minutes. Keep stirring them and turning them over, so they won’t stick. A non-stick pan is a good idea.
