Red Cabbage

Red Cabbage


1 head of red cabbage,

4 apples (you can use a mixture of Mac's, Granny Smiths, Ambrosia etc.)

1/2 c. raisins

1/2 tsp. salt

1/3 c. sugar

1/3 c. mild vinegar, balsamic or apple cider


Cut cabbage into quarters. Remove hard core. Shred pieces of cabbage in a food processor.  Add chopped apples, raisins, salt, sugar and simmer for about half an hour.  Taste.  You may need to add more salt, vinegar, or sugar.

I usually sautee the cabbage for 5 min in oil before adding the other ingredients. It helps break it down and adds some flavour
