- 2 bananas (can be brown icky bananas)
- ¼ c. salad oil (safflower or sunflower oil)
- ½ c. orange juice
- 1 c. white flour, 1 c. whole wheat flour
- 1 tbsp. baking powder
- 1 tbsp brown sugar
- 2 eggs
Preheat oven. Mash bananas in blender. Add eggs, salad oil, orange juice and mix. Add white flour, whole wheat flour, baking powder, brown sugar. Don’t overmix at this point, otherwise muffins will be tough. Grease muffin pan, bake at 400° for 15- 20 min. Good way to use old bananas!
