Mustard Chicken Drumsticks

  • enough Dijon mustard to coat each drumstick
  • 1 egg, beaten
  • breadcrumbs
  • Coat drumsticks in mustard (about 1 tsp per drumstick).
    Dip drumstick in egg. Roll in breadcrumbs. Bake at 325º in an oiled pan for 1 hour. At half an hour turn the drumsticks over.

Tom’s ideas for making it crispier:

  • raise the heat
  • use a rack instead of a pan
  • mix some Parmesan in with the panko
  • possibly: use dried instead of regular mustard
