Candied Grapefruit Peel

  • 1 c. sugar
  • ¼ c. water
  • 2 tbsp. corn syrup (optional)
  • 1 c. peel (prepared)

Cook until candy thermometer reaches 230°.

To prepare peel

Soak overnight in 1 qt. water with 1 tbsp. salt. Drain, boil 20 min. Repeat 3 times. Cook about 4 hrs.

For orange peel

Cut and cook 1 hr., then candy as above.
