- <ul> <li>1/2 lb. butter - </li> <li>1 1/2 cup sugar - </li> <li>5 eggs - </li> <li>3 cups flour (after sifting) - )</li> <li>1/2 cup strawberry jam (may substitute part brandy) - )</li> <li>1 tsp almond extract - </li> <li>1 tsp cinnamon - </li> <li>1 tsp each allspice, salt, soda - </li> <li>1/2 tsp clove powder - </li> <li>1 cup dried fruit ( pears, figs, apricots...) - &hellip;)</li> <li>1/2 cup chopped dates - </li> <li>1/2 cup seedless raisins - </li> <li>1 lb. currants - </li> <li>3/4 lb. seeded raisins - </li> <li>1 cup chopped dried black cherries - </li> <li>1 cup chopped nuts </li> </ul> <p>For 1 large cake. Line baking pans with parchment paper. Prepare fruit and dredge with some of the flour. Cream butter and sugar well, add eggs one at a time beating well at each addition. Add extract and preserves then dry ingredients and fruit. (Reserve a little batter before adding the fruit to put on top of the cake to prevent the fruit drying out or burning.) bake in a 350 deg. oven for 20 min. then reduce to 275 deg. to finish baking 2 1/2 - 3 hrs..</p>
